Cynara cardunculus. Perennial plant that reaches up to a meter tall and springs once a year. Its leaves are light green, covered with a white fuzz, producing a purple flower. It is Mediterranean region native, with the same family as the common thistle, which has been enhanced for human consumption for many years of cultivation.
