yu-shiang shredded pork

Yu-Shiang means smelling and tasting like fish. It is not really true about this dish though. The making of this dish is actually using the ingredients usually used to cook fish, to cook the shredded pork. This was where the name "Yu-Shiang" came from. The ingredients include Chilli, Ginger, Soy sauce, Garlic, sugar, Salt, vinegar, etc. Although the combination of these ingredients is usually used to cook fish, it works very well with shredded pork and it produces a surprisingly nice taste, mixed by sour, sweet, a little spicy and salty. Due to the complicated nature of the taste, the cooking and preparation of the ingredients really matter because if one of the flavors take up too much then it takes away what is special about this dish. Many restaurants provide this dish, and not restricted by Si Chuan Cuisine restaurants. But not many of them really make this dish well.
