Ma Po Tofu is probably the most famous Chinese dish made of Tofu. The original taste of Tofu is plain and not exciting, so are most dishes mainly made of Tofu. In 1860s, a cook's wife invented this dish which brings a totaly different flavour to Tofu. Stir-fried with special spicy sauce, soybean and some minced pork, Mapo Tofu keeps the tenderness of Tofu, but is also added into the spicy flavour and some taste of pork. The mixture of them brings surprisingly delicious flavour. Beware though if you can not take much spicy food. Mapo Tofu is usually quite spicy in every restaurant of China.
