surface tension
Intermolecular forces acting on the molecules at the free surface of a liquid tend to minimize the surface area of the liquid and give the surface properties similar to those of an elastic skin under tension. When two dissimilar liquids make contact, these intermolecular forces will cause the shape of the interface to change until the potential energy of the entire molecular system is at a minimum.
