steamed spare ribs in black bean sauce

This dish has a really delicious taste that would be hard to forget if you have ever had it. It takes a long time and quite a few steps to make. The ribs selected for this dish have better to have some fat but not too much. The first step is to flavor the spare ribs with many ingredients like black bean sauce, ginger, a little chilli, salt, soy sauce, oyster sauce, sugar, rice wine, etc. The flavoring has better to be as long as a few hours. The second step, frying the ribs a little, could be skipped by some cooks. Frying the ribs with some more ingredients like garlic would make the dish taste even better. The last step is steaming the ribs with quite a bit of Scallion. And the steaming is supposed to make the meat and the ribs to be almost separated.
