mascarpone
Mascarpone is an Italian cheese made from cream, coagulated by the addition of citric acid or acetic acid. After denaturation, the whey is removed without pressing or aging. Mascarpone can be manufactured using cream and tartaric acid, citric acid, or lemon juice.
