Although its name is plain enough, this is a very popular and famous dish in Shanghai. The biggest secret is the chicken, it has to be from the local San Huang Chicken(三黄鸡). "San Huang" means Three yellow, which are yellow feather, yellow beak and yellow feet. San Huang Chicken is the best chicken for this dish. After some complicated catering, including being boiled for a certain hours and preserved a little so it would be a little salty but still quite fresh. Served with the special sauce, the taste would be incredible. Each bite would be tender but somehow also a little chewy. With its special sauce, it will taste just incredibley delicious.
